Description
Cynara Scolymus (Globe Artichoke) is a perennial vegetable that is also a showy bloom in a sunny border. It first produces huge grey-green leaves and then the spiny buds can be cut, cooked and eaten. However, if these are left on the plant, they enlarge and turn into magical purple thistle-like flowers. When flowering, they are attractive to many pollinators and then later in the season, they seeds become appealing to some bird species. Cynara Scolymus should be in the back of a sunny border in a sheltered area with moist, well drained fertile soil.
